Rice should be stored in a clean, dry, and airtight container to prevent exposure to moisture. As a traditional and reliable method, a few dried neem leaves may be placed on top of the rice before closing the container. Neem naturally repels insects and helps maintain the quality of the grains without altering their taste. Keep the container in a cool place, away from heat, direct sunlight, and the cooking area to preserve freshness for a longer time
India thrives on rice, and it is one of the staple foods of the country. There are premium rice varieties like Basmati, which are generally used during festivals and special occasions. However, for regular daily meals, it is traditionally better to use regional rice varieties such as Indrayani, Kolam, and Ambemohar. Indrayani is particularly suitable because it does not make the meal feel heavy. Some nutrition-focused YouTubers have also suggested that Indrayani has a relatively low glycemic index compared to many other rice varieties. Kala Namak rice from Uttar Pradesh is also considered diabetic-friendly and lighter for dinner. However, this can be quite subjective, and ultimately the best rice is the one that suits your body and dietary needs.
Ayurveda suggests different ways of cooking rice to reduce the impact of excess starch and help the body receive the full benefits of the grain. Various methods such as cooking rice in a pressure cooker or other appliances are widely available on the internet. However, we suggest one of the traditional methods. First, wash the rice three times and soak it for some time. The rice-to-water proportion can be 1:2 (one cup of rice with two cups of water). Cook the rice for 10 minutes on high flame, then reduce the flame to the minimum and cook it for another 10 minutes. For the last 5 minutes, place a plate over the pot and pour a little water on top of the plate. When you see bubbles forming in the water on the plate, it indicates that the rice is almost cooked. Switch off the flame and keep the plate as it is for the next 10 minutes so the rice finishes cooking with the steam inside the pot. You can enhance the taste by adding homemade ghee, and a few drops of lemon juice may also be added while cooking. The rice turns crystal white, with each grain remaining separate.
